Tomato soup

The humble tomato soup is simple, cheap and delicious. I will tell you how to make this dish.

  1. Dice onion and garlic.
  2. In a pot, heat up a good amount of oil over medium-ish heat. Sauté onion, garlic and chili flakes.
    • The idea is to extract flavor so don’t use pitiful amounts of oil that just vaporizes instantly.
    • Make sure not to burn anything.
  3. Add your crushed tomatoes and give it a stir.
  4. Take the empty tomato can and fill it halfway up with water. Mix in your stock cube of choice. If using premade stock use that in place of the water obviously.
  5. Combine! Add the stock into your pot and stir well. At this point it is a good idea to add ground black pepper. Salt and other spices (dried basil) also go in now. Taste the soup.
  6. Let simmer for at least 20 minutes.
  7. Take the pot off the heat and turn the soup into mush! I recommend using an immersion blender but mashers work just as well. Taste and add salt if needed.
    • If you were to use something like fresh basil blend it in as well.
  8. Done! Garnish with smetana.
